谢谢你昨天和我分享了好多事情,每回和你交谈都有收获。我到过Mary的blog,看到她的芒果酵素,是连果肉一起吃的。是不是说,完成发酵的酵素,不需要把果肉拿出,直接放进冰箱也可以?谢谢!

like to check is it ok if we use the fruits which we have kept in the fridge (of course after wash & leave the fruits to dry then cut them up). Or is it better not to store the fruits that we want to do enzyme in the fridge after we buy them?

Hi Adeline,
你说:"but become 1/2 bottle only leh" 不用担心,这是正常的!3天后,你可以打开瓶盖,再加入水果,如果不够甜,也可以再添加冰糖,然后把盖盖回,从这时起,就不可再开盖或添加任何东西了,但是要记得每天要把瓶子摇一摇,帮助酵素发酵,至到2个星期后,就完成了,ok?

子干,你太客气了,应该说是我在你那学到很多,才是真的!
我说得不错吧!到Mary 的 blog 去,肯定会得到视觉上的享受,这鬼灵精会做出千变万化的美味食品,最难得的是:吃得很健康,什么都讲究原汁原味,不采用任何添加物,就像是完成后的芒果酵素,他们把果渣也一起吃下去,你所看到的1杯芒果酵素,就是他们1家4口原汁原味的健康酵素饮了。
至于完成发酵后的酵素,需不需要把果肉拿出,那要看你是做大瓶还是小瓶啰,小瓶我通常是直接放进冰箱储存,省略了过沥步骤,因为懒嘛!哈哈.... 若是大瓶的,就一定要过沥,把纯酵素装进另外的瓶子里,要不1天3次把大瓶子拿进拿出,万一打破了怎么办,恐怕到时我们的才子007阿哥得写1篇“瓶破歌”了,哈哈........

what if sometimes we buy the fruits but didn't want to do the enzyme yet? Worry if I leave it at room temperature for a few days the fruits will continue to ripe.

mixfruit cake 的mixfruit每次都会沉到下面去,也许是你用错粉,或是蛋糊搅拌不均匀。

水果买回来后,就要马上清洗,抹干水分,再风干后,就要开始做了,要不然水果很快就会熟,水果熟了,里面的酵素就减少,半生熟的水果含最多酵素!ok?

所谓的14天,就是从你开始做的那1天算起,例如:01/07/07:开始,04/07/07:打开瓶盖上下翻动果块/再加水果或冰糖,14/07/07:完成,明白吗?

if you 1st time open on 4 days then you need to wait for another 10 days! 4 + 10 total 14 days!

好了不起的子干哟,1天内做了两道佳肴:猪脚醋和mayonnaise,你的猪脚醋不算是不成功啦!应该是所用的醋不是双料的,所以不够美味咯,没关系的!累计了1次经验,下次就知道该买怎样的醋了,Bryan 肯定吃得开心。
自制 mayonnaise 好吃得不得了!当然咯,因为细腻鲜美嘛!如果用来沾烫熟的大虾,更是一级棒!!!下回试试看,若Bryan 再来拜访你时,做道沙律虾请他尝尝,不骗你!他肯定会吵着你再做哦!

Could you teach us/me how to make traditional cai tao kuey because don't like the square type that is sold everywhere (no taste and sometime hard hard one). I miss the traditional type , especially fried it a bit crispy , lagi nice yummy yummy!!! hahahaha can't ren anymore liao!!! hahahaha hope you can teach us immediately follow by the potatoe receipe in the programme. pleaseeeeeeeeeeeeeeeeee
