大家都在做酵素, 谈酵素, 都在问酵素怎样做?
好, 现在就让我向大家讲一讲, 我学习做酵素
的过程吧! 2年前我的妹妹得了癌症, 我就立刻
想到了酵素, 可是那时候我并不会制作酵素, 只好
到有机商店购买盒装的粉状酵素, 可是好贵哦!
1盒$50+, 1个月要花$150+, 我就到处问人, 到处
找书, 也上网查询……皇天不负有心人, 1位正在
学习中医学的朋友: 净风, 给我带来2本书刊“有
福同享”1&2, 我很仔细的阅读每一个字, 读到
性量法师患有心脏肿大的问题, 法师怎样以身
法, 利用果菜汁和酵素治愈了自己的疾病, 然后
把酵素的制作法公诸于世, 令我非常的感动, 感谢
性量法师无私的奉献! 也感谢我的好朋友: 净风,
给我带来了这么好的2本书刊. 我做酵素已经有1
年多了, 家人在喝了酵素后, 都获益良多.妹妹在
化疗其间, 因为喝酵素, 除了掉光头发外, 其他一
切的副作用, 都不曾她身上出现过, 弟妇患高
压多年, 喝了半年多的酵素后, 血压回复到健康水
平, 大儿子被检验出胆固醇过高, 喝了酵素3个多月
也同样回复健康了水平….. 无尽的感恩与感谢。

各种水果酵素的基本做法
器具与材料:
玻璃瓶 : 澈底洗净, 以热水消毒, 滴干水分.
最好放在阳光下晒干

占板 : 指定只用1个, 不能用来切肉切鱼,
用热滚水烫过消毒

水果选择 : 半熟水果

青皮柠檬 : 去皮切片

褐色冰糖 : 包装

制作法:
1. 第1层水果, 第2层柠檬, 第3层冰糖,
重复,铺满至最后一层为冰糖,
即可封密. (水果比其他材料多)
2. 水果发酵至第3 / 4天, 打开瓶盖,
上下翻动水果块, 若味太酸, 可再加入冰糖,
太甜, 可再加入水果, 盖好继续发酵.
3. 发酵期间要不时摇晃瓶子, 使其发酵均匀
4. 二星期后发酵完毕, 把酵素过沥,
放入冰箱冷藏, 以保持其新鲜度.
酵素最好在2星期至1个月内喝完

注意事项:
* 酝酿酵素时, 切忌接触或沾到油/水

* 一般发酵至第3天, 就开始出现白色
泡沫, 这是正常现象, 不必担心, 有泡沫
证明酵素有生命力, 即是酵素起了发酵的作用

* 饮用酵素: 每次30cc, 一天3次
(30cc : 2汤匙)

* 早上空肚喝, 饭前½小时或饭后1小时,
晚上临睡前喝

* 果渣可食用, 也可做成果酱, 或用来
擦皮肤, 有杀菌功效

anonymous, i also have the same problem when i first make. 你也可以在罐子上绑一些树胶圈 (rubber band), 很奇怪的,这样蚂蚁就不来了。

Elaine, if u are using window XP, the OS has in-build chinese sofeware, u just have to go to the regional & language option in the control panel to launch the language, then u would be able to alternate between using Chinese and English by following the instructions.

什么酵素都好啦!我是每个星期都做1种不同的水果咯,酵素不是药!要有耐心!要长期的喝!才能见到效果的,还有做好后的果渣更神奇呢!如果脸上的黑斑久久都除不掉,只要每天用果渣擦脸,然后等20分钟后,才用清水洗净,3个月后,肯定变成白雪公主,不骗你,是真的!我们的好朋友:Dorene,就是1个例子,3个多月前,她的脸两边都有黑斑,我给她1大包的果渣,她很勤劳,1天擦2次,上个星期,他们都来我家,wah !! Dorene 整个脸容光焕发 简直判若两人,你说神奇不神奇?现在的她,已经是酵素的拥护者了。

Irene,actually i was pondering whether to make the enzymes or not leh think cannot escape liao after wad i saw in your blog it is so clear and color so beautiful. I think u must have listen to Billy's programme about enzymes too. If he knows about your hard work and effort to bring health to everyone he sure very TOUCHED. Wad fruits do u suggest for 1st timer children which is acceptable for fussy children.......very ma fun hor...anyway thank you and wish u happy and healthy forever

the steps is 1 layer fruit, follow by 1 layer lemon, follow by 1 layer rock sugar, as one set. Then repeat the same thing for 2nd set, 3rd set until the bottle is full and make sure the top layer of the bottle MUST be rock sugar... as can be seen by the picture...

Hi all the anonymous and newcomers,

Yes ,it is truth after using the enzyme for few months, my skin texture improved, my face look brighter after applying the 果渣, you have to apply twice a day.

As kd already explained that 1 layer fruit, follow by 1 layer lemon, follow by 1 layer rock sugar, as one set. Then repeat the same thing for 2nd set, 3rd set until the bottle is full and make sure the top layer of the bottle MUST be rock sugar... as for the first timer i would suggest that use oranges (as the 1 layer fruit)after you have master the skill of doing the enzyme than maybe you can use other fruits like banana, kiwi etc.As for the lemon, auntie irene use the green lemon instead the yellow type.

Pardon me for replying on behalf of aunite irene cos she is quite busy now.

Thanks for ur compliment. Yup, I guess I really have to thank god for having an auntie like Irene. I m realli entitled to all the really good stuffs that Auntie Irene makes. It is really a priviledge that I guess we used to take for granted.

I used to be the guinea pig whenever Auntie Irene tries out new recipe but have never appreciated that. Nw that she is no longer staying with us, eating food made by her has become a longing.

Haiz... But what to do? Just gotta visit her more often.

Anyway, heard from Auntie Irene that she has this group of really good friends who makes her day more fulfilling and after visiting her blog. I guess its really true.

tracy, you can use a clean and dry wooden chopstick to turn the enzymes.As auntie irene did mention that when doing enzymes must not contact with water and oil, so suggest that the tools for making the enzymes must not use for other purpose should be stricly for enzymes only. Hope you success in making them and feedback to us.

做酵素等于是制作有益菌,所以一却的器具都要洗得非常干净和用热水消毒,要开始制做时,手也要洗干净和抹干,做的时候,也不可以讲话,以免口水喷到材料,所以我才叫你们去买那2本书,书里面很祥细的说明一切。
用干净的筷子上下翻动水果块!其他的,请读Dorene 的解答。
甜菜根NTUC 有卖,圆形的,不要买软的,软的已经快要坏了。

你所描述的是对了,到第4天,你可以再加水果和冰糖,也顺便拿一点点尝尝看,如果有酒味,那就成功了,如果嗅到臭水味,那就是做坏了,赶快丢掉!!
酵素做坏了,不表示你的东西不干净,而是水果有问题,明白吗?
酵素的泡沫是白色的!黑色就是坏了,Violet 的妈妈第1次做的,就是黑色的袍沫,坏了,现在她已经可以做到很成功了,MC的妈妈也在做,会做酒的人,做起酵素来,就容易的多,因为原理是一样的!

Tracy, they are not the same, there is clear picture at mary's blog, did you go and peep? kekeke... it is difficult to judge the size from the picture. I saw NTUC selling them and it did indicate their names hence it is easy to look for it unless it is not selling that day :) cheers...

I actually eaten the beetroot,and believe that not all will like the taste, so suggest that you try getting 1 small one from NTUC first see whether you like the taste before you use them to make enzymes.

我的水果酵素是在7/6 开始制做的,之前有白色泡沫,但在第三天11/6 翻动水果块后,泡沫消失了。请问问题出在哪里?

Hi Tracy,

I was wondering if it could be your fire too strong? If fire is too big, the heat is too strong and cause your wing's outer layer to be burn fast but the inside not well cook. Try the oil's heat by dripping a wooden chop stick to the heated oil, if you see bubble coming out, means the oil is heated up liao...

Aunt Irene said, usually the 1st wok of fried item appearance will not be nice. The second wok onwards one will look better also...

I saw my mum test the oil temperature, what she use is the 'batter' which she dip for the wings, prawns etc... She will drip a small amount of the 'batter' into the wok of oil, once the 'batter' float, means the heat is ready for frying... Happing cooking.

Remember to judge the 'size' of the fire so that you can control it better the next time you fry any other things...

carol, when you start to do enzyme, leave it at a cooling place and it has to be well ventilated. stir it on the 3rd or 4th day and shake it well daily from the 3rd or 4th day after you stir it. after 2 weeks from day 1 of making enzyme, the enzyme is ready to consume, hence pour out the water and store in the fridge...

corn flour: 是栗米粉,性质和薯粉差不多,通常用来勾芡或用以中和其他的粉质
plain flour: 是普通面粉,用途最广,可做中西糕点
rice flour: 是由米所磨成的米粉,有粘米粉,糯米粉....
希望以上的解释能让你大略清楚一些。

饺子
皮料
普通面粉:500g
温水 :250-270g

方法:混合成硬团 → 盖上布→ 醒发30 mins→把粉团切割小粒 → 杆成圆形 → 包上馅料

馅料
猪肉碎 : 300g
嫩姜 : 1小块(剁碎)
青葱 : 5根 (切粒)
白菜 : 300g(切粒状,加入盐,腌10分钟, 扭干水分)

1. 把猪肉碎和嫩姜碎放入大碗内
2. 加入水,盐,酱清,酱油,麻油,胡椒粉拌均
3. 腌20分钟
4. 加入白菜, 青葱拌均

hi nicole,

if it is bitter, then how come you can feel sweet leh? dunno really understand leh, but if you already add alot of rock sugar, then should not add anymore, otherwise no meaning to eat healthy food lor...too much sugar, you know lah hor...

After the enzyme is ready to consume, the taste may differ abit, so take this bottle as experiment then next time you may adjust accordingly...

Dont add too much rock sugar, if you use that bottle size as shown in Irene's blog, she usually use about 600g of rock sugar(still you may adjust to your preference). We did went to your blog and see, the bottle you use is not too big, so 1 packet should be enough liao... okie? :)

add fruit will have more water after 2 weeks of the process. but can add only on the 3rd or 4th day when you open cover to stir and try the taste. during this time, may add fruit (to get more water enzyme) or rock sugar(if not sweet enough).

after that, no need to open cover to stir liao, only hold the bottle with both hand and shake will do... but small bottle of course can use single hand lah, no special weapon with both hand lor, kekeke

I have made this enzyme before but only with green lemon & using rectangle rock sugar. But i didnt know is enzyme and i stop making because previously my ex-maid drink it until empty..so angry...

其他细节,kd已和你解释的很清楚了,唯一要再对你重新补充的是:水果一定要半生熟的!在你的blog看到你的黄梨酵素有这么多水分,原来你是买到已经熟了的黄梨,记住哦!半生熟的水果含有大量的酵素。
酵素做好后的第3/4天,只要打开1次去上下翻动水果就好,过后就无需再打开瓶盖了,一直等到2个星期后,就是收成时候才打开,记住咯!

Don't mind if i ask if you are able to read the chinese? as you ask for the english version... Some people might still be able to read a bit of chinese lor, as irene is wel verse in chinese... so if you can't really do chinese, you will loose out alot cos most of her reply is in chinese...

1. After cutting the mango must I wash the mango again? How about the rock sugar must wash also?

you only need to wash the mango with the skin before cut.

After washing let it TOTALLY dry, might take few hours which will be better. Also need to wash the green lemon, same as mango or whichever fruit you like to use. No need to wash rock sugar.

You might be curious, as when the fruit is cut, there is juice so how? right? not to worry, it is ok if the juice dripping, so long as is not water and oil. So try not to talk will in the process of making enzyme to prevent any saliva contact also :)

Knife and chopping board prefer to buy brand new as there might have grems after cutting meat etc...

when preparing the enzyme, EVERYTHING MUST be DRY. NOT A SINGLE DROP OF WATER or OIL is allowed.

My banana enzyme does not have any bubbles at all! Strange? It's the 5th day already. The first two bottles that I made (babana and grapefruit), had lots and lots of bubbles.

Is is considered as failed? should I wait for few more days or throw it away? I've just opend it today and d colour looks Ok, no bad smell.

Anyone had this experience before?

照你的形容,你应该是做成功了,刚开始喝时,是会觉得有点呛,但是当你放入冰箱储存2 – 3 天后,酒味就会变得越来越香醇了
